Healthy (and fast) breakfast – Chocolate Walnut Parfait

This breakfast pudding takes just a few minutes to make and is full of supercharged goodness to get your day started right. Oats are wonderful for heart health – full of protein, fibre, can help to reduce cholesterol, rich in anti-oxidants and phytonutrients. The cacao is an antioxidant powerhouse. It’s benefits are extensive – improves heart and bone health, improves mood and great for energy levels too. The walnuts help provide you with that essential dose of healthy fats.

Serves: 1
Preparation: 5 minutes
Leave in fridge overnight

Ingredients

1/3 cup rolled oats
¾ cup oat milk
¼ cup walnuts
1 tablespoon chia
1 tablespoon coconut flour
1 tablespoon cacao powder
1/2 tablespoon maple syrup
1 teaspoon flaxmeal

TOPPING
walnuts
shredded coconut
drizzle of maple syrup

Method

  1. Blend oats into a powder (a blender or mini processor will work well, I use a Tribest Personal Blender) and then mix together with remaining ingredients in a large jar.  (This tastes great without grinding the oats too, it’s optional).
  2. Before eating stir, add toppings.
  3. Enjoy guilt-free!
